Mac and cheese: It’s the ultimate comfort food. It’s warm, cheesy, gooey  … and dare we say a bit bland sometimes? Winewood has a sophisticated, flavorful twist on this classic dish: Smoked Gouda Mac and Cheese. Read on for the restaurant’s recipe that you can easily whip up at home. Get ready for a crowd pleaser!  


Smoked Gouda Mac and Cheese


Ingredients: (serves 4-6 people)

Shredded Gouda cheese, preferentially aged.      1 Lbs

Elbow pasta  (generic)                                            1 Lbs

Raw bacon                                                              6 strips

Heavy whipping cream                                            1 Qt.

Ground white pepper                                               1/2 Tsp. or to taste

Kosher salt                                                                to taste


Cook the pasta in boiling water with a pinch of salt. Once the pasta is al dente, place in cold water to stop the cooking, drain and set aside.

In a medium size sauce pot add the bacon (previously diced) and cook until almost crispy, then add the heavy cream and keep at medium heat stirring continuously. When the heavy cream starts simmering add the shredded Gouda cheese slowly, using a wire whisk continue to incorporate the cheese until a creamy consistency, season with kosher salt and white pepper, add the cooked elbow pasta and serve! It goes great with our BBQ Pork Ribs.
