Crepes Bistro fearlessly puts a Texas twist on French fare Creperies are not exactly ubiquitous in our area, but we discovered a gem in Colleyville: Crepes Bistro. This charming eatery along Colleyville Boulevard is churning out whisper-thin wonders filled with all kinds of goodness. We’re talking cinnamon apples, banana and Nutella, among other tantalizing choices. But Crepes Bistro isn’t afraid to push the flavor boundaries either, offering a taste of Texas with ingredients such as jalapeño, Texas-style sausage and barbecue sauce. 

The menu bursts with an extensive list of crepes that evenly bridge the sweet and savory divide. You can expect plenty of variety to satisfy everyone’s tastes—including your kids. Bring the whole family for brunch or an after-school snack. We don’t know any kids who would turn up their noses at a hot dog crepe. (Or one smothered in whipped cream.) We also like Crepes Bistro for a laid-back date night; live jazz music every Friday and Saturday from 8 p.m. to midnight adds an air of sophistication. 

With more than 20 signature crepes on the menu, including the Tex-Mex (beef or chicken, sautéed veggies, black beans, jalapeños and chipotle sauce) and the Chicken Apple Sausage (cheese, fig spread, sautéed onion and fried egg), you’re bound to find something to love. Or, just select your favorite ingredients for a totally custom crepe. A plain crepe starts at $4, and you can pile on the flavor with ingredients such as prosciutto, salmon and dried fig. 

In the mood for something sweet? Who isn’t? We’re obsessed with the sweet Brie crepe. You can’t go wrong with Brie stuffed in a delicate crepe with honey-roasted pecans, a touch of honey and whipped cream. For those who prefer flowing chocolate, Crepes Bistro excels with its Nutella crepe, which is loaded with banana, strawberry, chocolate sauce, almonds and whipped cream. 

And because few things go better with French crepes than espresso, be sure to try your pick-me-up in enticing flavors such as white chocolate, vanilla bean and raspberry. Or cozy up to a warm Chai latte or green tea while the kids enjoy a hot chocolate with their crepes. 

Like any authentic French eatery, Crepes Bistro also serves quiche, friands and plenty of treats such as macaroons and crème brûlée. But the star of the show is indeed the crepes, those delicate, French-style pancakes with a perfect balance of crispy and fluffy. Go try one. No matter sweet or savory, they’re all très bon to us.
