In the fall of 2000, Davalos played an instrumental role in launching Mickey Mantle’s Steakhouse in Oklahoma City. His exceptional performance, precise culinary skills and innate leadership qualities earned him a move to The Woodlands, near Houston. There, he refined his craft under the guidance of Executive Chef Daniel Nemec. Learning under Nemec prepared him to lead his own restaurant with an eye on excellence.
As executive chef at Kirby’s in Southlake, Davalos brings more than two decades of dedication, passion and innovation to the table. His daily chef creations, ranging from inventive new dishes to time-honored steakhouse favorites, consistently impress and delight guests.
In addition to the signature steaks and seafood that define the Kirby's experience, Davalos continuously explores new flavors, incorporating fresh, seasonal ingredients and offering gluten-free menu options.
