A great cup of coffee—or tea or cappuccino—is delicious any time ofbryear, but cooler temps make you hanker for a hot mug you can wrapbrchilly hands around and lean over the aromatic warmth wafting towardbryour face. Carlos and Susan Palacio, owners of TRIO Craft Coffee, brshare a passion for java and people, which led to their pursuit of a localbrspecialty coffee shop.br
After marrying in 2012, the Palacios determined their mission: tobrserve their community and deliver incredible coffee. “We wanted tobrtake something ‘common' and ubiquitous and unearth the best possiblebrresults,” Susan says.br
The couple met in Guatemala, where Susan was serving as abrmissionary and Carlos was on a short-term trip. A native of Mexico City,brCarlos lived there and in Columbia before moving to the United Statesbrover 20 years ago. “His heritage plays a large role in our love for andbrdesire to serve excellent coffee,” Susan says. “He remembers drinkingbrcoffee even as a little kid.”br
Susan has always been a coffee lover, too, but her appreciation forbrthe craft has evolved exponentially over the past five years. Together they have unearthed the best possible product thebrcoffee bean can deliver.
TRIO Craft Coffee takes its name from a fewbrsources—master coffee tasters take three sips whenbrassessing flavor, and local coffee houses representbrthat third gathering spot in addition to work andbrhome. For the coffee at TRIO to be exceptional everybrtime, three elements come into play: water, beansbrand barista. The result? High-quality coffee and anbraspiration to elevate coffee brewing to a culinary artbrand not just a commodity.br
Oak Cliff Coffee Roasters and Novel CoffeebrRoasters provide the beans behind the brews. “Webrhave purposefully partnered with local roasters whobrare doing an excellent job and consistently providingbrthe highest quality beans,” Susan says. “Each seasonbrwe infuse unique ingredients with coffee and teabrto provide our customers with something differentbrfrom our standard menu.”br
This fall, expect Autumn Spice Latte, MexicanbrSalted Caramel Cappuccino and other seasonalbrdelights. While good coffee and teas are certainlybrworth the drive to TRIO, the mouthwatering pastries, brdelivered fresh from Zenzero Bakery in nearbybrCoppell, and gluten-free offerings from Pinch of SaltbrPastries, plus hot sandwiches will keep you comingbrback for more. Consider TRIO a one-stop coffeebrshop for flavorful pick-me-ups and tasty options tobrwarm you from the inside out.
