Step through the softly lit patio and into a space where old-world charm meets modern allure. Earthy green paneled walls wrap around rosy red tile, globe chandeliers float nearly 12 feet overhead and a warm hum of conversation spills from cozy booths and the polished marble bar. Welcome to ELLA, Dallas’ newest neighborhood bistro, designed for lingering evenings, exceptional cocktails and food that comforts as much as it impresses.
Opened in June in the former home of Chido Taco Lounge, ELLA is the latest concept from local restaurateur Blaine McGowan. Intimate yet elevated, the 2,500-square-foot space features 63 seats (plus a 600-square-foot mezzanine) and a feminine design aesthetic that feels both polished and personal. Upstairs, guests can sneak behind velvet drapery to find Customs Speakeasy, where bartender Jairo Castillo crafts cocktails using premium Mexican spirits.
At the helm of the beverage program is Julian Shaffer, recipient of the 2024 MICHELIN Guide Texas Exceptional Cocktails Award for his masterful mixology at Rye. From the umami tang of the Shiso Gin & Tonic to the Salsa Verde Ranch Water with its tantalizing blend of tequila and mezcal with tomatillo and citrus, his creations blend technique with surprise.
In the kitchen, Executive Chef Kyle Farr (formerly of Sachet and Boulevardier) delivers elevated comfort fare, like Short Rib with smoked sweet potato and red wine jus, or Shrimp & Masa Dumplings with roasted peppers and broccolini.
“We wanted to bring something to the neighborhood that wasn’t there—something welcoming and refined. We want to hit on all cylinders with this concept: exceptional food, drinks and service,” says ELLA Owner, Blaine McGowan. “With Julian and Kyle leading the way, we have an opportunity to do something very special and bring a new experience to Dallas. We plan to provide guests with an amazing experience all around.”
With dinner service Tuesday–Saturday from 4 to 10 PM - and lunch and brunch soon to follow - ELLA offers more than just a meal. It’s a destination where hospitality takes center stage, and every detail invites you to stay just a little longer.
