Italian Grill, a fast-casual eatery that blends the best of burritos and Italian cuisine, has quickly made its way to the top of the food chain for locals and visitors alike.
“Bolo is an exciting, modern idea that blends the best of quick- casual dining with the personalized touches of a custom meal,” Judson Phillips, Bolo owner, says. “We give you everything you want, nothing you don’t.”
Created by restaurant veteran Phillips, Bolo Italian Grill caters to cravings for customized flavors with an emphasis on bright, seasonal ingredients hand prepared in a warm, vibrant atmosphere. His one-of-a-kind handheld pasta concept blends the best of Texas with the best of Italy to deliver something original.
The restaurant’s signature Bolo flatbread wrap made from organic flour and Italian seasonings is filled with a heaping helping of angel hair pasta with responsibly raised proteins, fresh veggies, house-grown herbs, a choice of four cheeses and hot or cold sauces handmade using recipes by a local chef and recreated daily in-house. “The one thing you’ve always been told—you can’t eat pasta with your hands—is no longer true!” Philips says.
Don’t worry, if you’d rather stick to Italian fare in its more traditional form, you can choose a pasta

bowl. You order the same way: pick a pasta type, then a protein, veggies and a sauce. Every dish can be made gluten-free and every entrée can be “bambini- sized” into a kid-friendly portion. “Contemporary lifestyles call for lots of meals eaten outside the home,” Phillips says. “But Bolo’s menu is so customizable, every bite tastes homemade and handmade just the way you like it.”
The restaurant has a warm, contemporary and urban feel. With an atmosphere conducive to a night out with the family, Bolo Italian Grill also has you covered if you’d like to indulge in an adult beverage or two—they serve alcohol. The fast-casual restaurant is open seven days a week for lunch and dinner from 11 a.m. to 9 p.m.
