After getting a look at this Pan Asian-fusion restaurant's extravagant dishes and a taste of their rich flavors, you won't be able to take your claws off their unbelievable dishes. The former Pho Chateau has been rebranded and restructured to transform into Lime Bar & Kitchen – the hottest new pho stop in the area.
Lime's dishes use high-quality ingredients and striking presentation to make each visit an adventure. Their menu items are getting people from all over the Metroplex to come out and try beautiful bowls of pho. Partners Tony Dao, Armani Reza Shahravan, Monica Gonzalez and Thi Phung knew there was a local hunger for aesthetically beautiful dishes that would make dining out its own exciting experience.
Pho, a hearty Asian noodle soup made up of broth, noodles, herbs and meat, has been around for centuries and continues to evolve over time. The dish is traditionally seen as a Vietnamese street food, but there's nothing common about how it's done at Lime.
The process of building these lavish bowls starts hours before they are served up to customers. Their two signature broths, chicken and beef, simmer for hours to build an impactful flavor profile with the chicken broth cooking for 12 hours and the beef broth 14. After the broth is ready, Lime builds these bowls up with the finest ingredients to create a truly one-of-a-kind experience.
“We wanted to serve up something that's aesthetically pleasing, and in that, it's really those little details that make a huge difference,” Phung said.
While elevated pho is not new to the Metroplex, Lime's combination of gourmet fixings and healthy alternatives provides a different kind of dining experience for locals, all for an affordable price.
“These items challenge the traditional Vietnamese signature dish while maintaining its taste, quality and expectations,” Dao said.
Whether vegetarians want a meatless option or gluten-free diners are interested in diving into their bowls, there's a bowl ready for you. Their Vegetarian Pho, served with fried tofu, mixed vegetables, broccoli, mushrooms, snow peas, carrots and Napa cabbage in a vegetable broth is just as filling and beautiful as their Bone Marrow Pho, served with bone marrow and flank steak in Lime's signature beef broth. And if you want a lighter option, swap out their typical rice noodles for an order of zucchini noodles. Their cup of pho also lets you try out their flavors with a smaller portion size, which is perfect for kids who want to try out something new or adults who want to dip their toe into the pho waters.
But a trip out would not be complete without experiencing the Lobster Pho, made with a 1.25-pound Maine lobster, cilantro and onions and served in Lime's signature chicken broth. While the crustacean is used for a rather whimsical staging, it also is packed with tasty meat the whole table can enjoy. You won't have to do all the work, however, the precious tail meat comes ready to be enjoyed. Once you dive your spoon into the flavorful broth and scoop up a bite of the tender meat, everything sings together in harmony. The white onion and cilantro help create some variety while also working in sync with the first-rate ingredients. It is the menu's priciest dish, but it comes in a massive bowl that can easily be shared among friends.
These hearty servings are perfect for sharing. So pick a specialty pho, a few tapas – like their delightfully light Spring Roll Sampler or perfectly-sized Viet Tacos – and one of their entrees – like their Orange Chicken or Traditional Fried Rice – to really immerse yourself in the variety available on their menu. If all that doesn't fill you up, try the Fried Ice Cream – battered vanilla ice cream topped with chocolate, whipped cream and a cherry. Make sure to try out one of their specialty cocktails like The Hustler or The Entrepreneur while visiting to complete the experience. “We are trying to have that young and hip energy while also staying authentic to the culture and its flavors,” Phung said.
