Cowtown Brewing Co. Brings Its Taproom To Southlake.
Pub fans who missed the small-town brews of The Ginger Man have a new taproom to raise a pint in. At the tail end of December, Cowtown Brewing Co. opened up in The Ginger Man’s former location, and residents are thirsty for its beer and barbecue.
Originally opening in Fort Worth in 2018, Cowtown Brewing Co. is the brainchild of Billy Avila and Shawn Kidwell, who also serves as the taproom’s principal brewer. Cowtown Brewing Co. produces a wide variety of lager-style beers, including its award-winning German-style High Brau and its No. 1-seller Cold Fort Worth Beer. It also offers a variety of seasonal beers such as the Flux Capacitor doppelbock, the Nick Cold Black Heart imperial stout, the Last Kaiser imperial Marzen and the fruity sour Spirit World.
“We have a small barrel program where we age beer in oak barrels,” Shawn says. “We have aged beer in bourbon, rye whiskey, VSOP brandy and even cabernet sauvignon barrels, some of them for up to 18 months.”
But brews are only half of the picture at Cowtown Brewing Co. The other half is the barbecue, which comes in both shareable and individual portions. Its brat bites are among its most popular items, with bratwurst and sauerkraut balls rolled and deep-fried to a golden brown crisp. Meanwhile, another hefty option is the melt-in-your-mouth BBQ sliders with either pulled pork or chopped brisket”. The Texas-sized German pretzel comes with a side of beer cheese and spicy mustard for an extra kick, and those looking for larger plates can try the Loaded Cowtown Tots with slow-smoked chopped brisket.
Even more options are available such as the flatbread pizzas, which come with a garlic butter base and an extra helping of shredded mozzarella. The BBQ flatbread combines the best of both worlds by topping the pizza with pulled pork or chopped brisket, while the sausage and garlic pesto flatbread comes with a pesto base, sausages and sun-dried tomatoes. And the Flammkuchen German onion pie provides the most exciting flavors yet with creme fraiche and smoked bacon lardons.
“We wanted to provide an atmosphere where our guests can feel comfortable staying a while and making friends — all while enjoying our beer and food offerings,” Shawn says.
