
April 18 kicks off Central Market’s new grilling event, Fire & Spice: A Global Grilling Adventure. To stay on top of all of the food trends from around the world, they are kicking it up a notch at this year’s event by bringing together different global flavors and influences. This year, Central Market has created six “mother sauce” recipes that act as the event’s main attractions.
Their Chimichurri offers South American flavors with herby, garlicky and bright flavors you'll want to slather over just about everything – especially your beef. While their Classic Tzatziki provides a cool creamy side to all of the smoky flavors that come off the grill. Their Chermoula, a spicy North African sauce, makes a great zesty and earthy marinade for your proteins. And their Piri-Piri, an African-rooted spicy stable often found on Portuguese menus, goes well with lighter options like poultry, pork and shrimp.
For some Middle Eastern flare, try the Baharat on your chicken and vegetables next time you grill out. The name means spice in Arabic, which makes sense as it acts as an all-purpose source of seasoning. And for sweet, spicy and salty elements, try the Korean Ssamjang. It's often found on specialties like shaved beef and pork belly.
